Allyl-isothiocyanate (AITC) is a sulfur-containing compound occurring in a colorless, oil form. AITC has a bitter taste as evidenced in many foods including mustard, horseradish, and wasabi. AITC is also able to induce a lachrymatory effect meaning it can cause the secretion of tears.
