Yeasts are oval-shaped microscopic fungi that reproduce through a process called budding. Some species of yeasts can convert sugar into alcohol and carbon dioxide, which have been leveraged in the production of baked goods and alcoholic beverages for thousands of years. Some yeasts are opportunistic pathogens, causing localized infections in immunocompromised individuals.
